Strawberry Muffins

Strawberry Muffins




Anytime we are blessed with strawberries I can't wait to make this wonderful recipe for Strawberry Muffins.   To sit back with a cup of coffee and enjoy these muffins is the only way to go (as my husband says).

The great sale we were able to get this past week at Aldi's (99 cents a quart)  leaves me busy.  The canning pot is bubbling with strawberry jam as I'm writing this.  Something we will definitely savor over the next year.  I also have froze a couple of trays of strawberries ready to be used in smoothies and other recipes.  They won't last long.



These delicious Strawberry Muffins are filled with strawberry bits throughout.  You will love them!


Strawberry Muffins

1/2 cup of butter, softened
1/2 cup of sugar
1 egg
2 cups flour
2 tsp baking powder
1/4 tsp. salt
1/2 cup milk
2 tsp vanilla
1 1/2 cup chopped strawberries

coating for the top (before they bake)
2 tsp. sugar
1/2 tsp. cinnamon


Mix butter and sugar together then add egg.   In a bowl sift together flour, baking powder, and salt. Add flour mixture and milk alternately to the butter mixture then add vanilla.   Fold in strawberries. Then spray muffin tins with cooking spray or use cupcake liners before adding dough.  Divide dough evenly through 12 muffins and then sprinkle cinnamon coating over the top of each muffin.   Bake at 400 for 20-25 minutes.
Makes approximately 12 muffins.

Note:  I also now use this recipe to make Blueberry Muffins.  I just substitute blueberries.
