Cheesy Macaroni and Chicken Casserole



Cheesy Macaroni and Chicken Casserole~ Vickie's Kitchen and Garden


Sometimes you just need a easy casserole for dinner.  One that stands on it's own and needs no other accompaniment.  This Cheesy Macaroni and Chicken Casserole makes the grade.   I combined all the ingredients this morning and then put it in the refrigerator to bake it later for this evenings meal.   So easy! 

This is also a great way to use up that leftover chicken sitting in your fridge.  You could though, make more chicken on purpose like I do just so you'll have a good excuse to make this recipe!  

Cheesy Macaroni and Chicken Casserole

Ingredients:

1 1/2 cups uncooked macaroni
2 tbsp flour
1/4 cup water
1 1/4 cup of chicken broth or water
1 can of condensed cream of chicken soup 
1/2 cup of shredded cheddar cheese
1/4 salt
1/4 tsp pepper
3 chicken breasts cooked and cubed (we used grilled)
1/4 cup of parmesan cheese
1/4 cup of panko bread crumbs

While pasta is cooking combine 1/4 cup water and flour in a sauce pan and stir over medium heat until smooth.  Gradually stir in chicken broth or water and bring to a boil.   Stir constantly for 2 minutes or until thickened.   Reduce heat and add soup, cheddar cheese, and seasonings.  Stir until cheese is melted.  Take off heat and mix in cooked chicken breasts

Drain pasta and mix together with the soup mixture.   Transfer to a greased baking dish.   Top with parmesan cheese and sprinkle panko bread crumbs over top.   Bake for 30 minutes at 350 degrees or until brown in a 9x13 greased baking pan.
